- 1 cup rolled oats
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 1/2 cup chopped pecans
- 1 tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C) and grease a baking pan.
- In a bowl, mix rolled oats, flour, baking powder, baking soda, and salt.
- In a separate bowl, beat butter and brown sugar until fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Gradually add dry ingredients to wet mixture, alternating with milk.
- In another bowl, mix pecans, cinnamon, 1/4 cup brown sugar, and 2 tbsp butter to form the streusel topping.
- Pour batter into the prepared pan and sprinkle streusel topping evenly over it.
- Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Let cool before slicing and serving.
Notes
For a healthier version, substitute part of the butter with unsweetened applesauce and use whole wheat flour instead of all-purpose flour.
